Danny Lapidus' Pasta & Peas

Peas and pastaWhen Hot Peas 'N Butter's Danny Lapidus gave us his recipe for Pasta & Peas, we were a little...skeptical. Essentially a pasta Alfredo, Danny uses cottage cheese as his base ingredient. "It sounds strange, but it tastes delicious!" insists Danny, laughing. Well, we tried it, and it is indeed yummy and way healthier than its Alfredo counterpart. Of course, we had to put a little Parmesano Reggiano cheese on top (shown in photo). A great recipe to get your little picky eaters to eat their peas!

Ingredients:

1 box rotini or bow-tie pasta
1 ½ large containers of cottage cheese
2 tbsp. sour cream
2 tbsp. butter
1 box frozen peas
Salt to taste.

Directions:
Heat a large pot of boiling salted water. Cook pasta and a few minutes before it is done, add peas. Finish cooking and drain water. Coat pot with a small amount of butter (to prevent sticking), and return peas and pasta to the pot. Add the cottage cheese, mix well and salt to taste. Add sour cream, top with some Parmesano Reggiano, if desired, and serve.
